I've tried this recipe a few times and my family really loves it.   I was pretty hesitant because my 3 year old is a picky veggie eater.  But,  I was happy when he devoured his serving and begged for more.  This is a super way to use up the leftover turkey that I made a few days ago in the crock pot.  (Chicken could also be substituted.)&lt;br /&gt;&lt;br /&gt;A side note:  We showed our 3 year old an episode or two of Popeye the Sailor Man on Utube to see if that would get him interested in giving spinach a try. I'm so excited about dinner tonight.  I wasn't sure what to make until I went out to check the mail and got my free Betty Crocker Scalloped Potato sample!  I was expecting a teensy box, but got a full-size box instead!!  I also got a coupon for $.50 off of a Betty Crocker box of potatoes.   That is awesome, isn't it?!?  &lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Anyway, I remembered a recipe that I wanted to try out that included a box of scalloped potatoes. I found the recipe in a great book called &lt;a href="http://www.amazon.com/101-Things-Do-Slow-Cooker/dp/1586853171/ref=sr_1_1?ie=UTF8&amp;amp;s=books&amp;amp;qid=1256760773&amp;amp;sr=8-1"&gt;101 Things to do with a Slow Cooker&lt;/a&gt;.  Here's the easy recipe:&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;b&gt;Scalloped Chicken&lt;/b&gt;&lt;/div&gt;&lt;div&gt;&lt;b&gt;Ingredients:&lt;/b&gt;&lt;/div&gt;&lt;div&gt;1 box (5 ounces) scalloped potatoes, including seasoning packet&lt;/div&gt;&lt;div&gt;1 can (8 ounces or larger) white meat chicken  (I had cooked up some chicken last night to use "somehow" today so I used that.)&lt;/div&gt;&lt;div&gt;3 3/4 cups water&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Put potatoes in greased 2 1/2 to 3 1/2-quart slow cooker first, followed by the seasoning packed and chicken.  Pour water over all. Turkey breasts were on sale at Kroger a few weeks ago for $.99 a pound.  For less than $7, I will be able to get 4-5 meals from one turkey breast.  My new favorite way to cook a turkey breast is in the crock pot.  It's a very easy and a fabulous way to get a lot of bang for your buck!&lt;br /&gt;&lt;br /&gt;Here's what you need:&lt;br /&gt;1 (6-7 lb) turkey breast; 1 can cream of chicken soup; 1/2 to 1 can chicken stock; 1/2 stick of butter, optional&lt;br /&gt;&lt;br /&gt;Stir together the soup &amp;amp; stock.  Pour mixture in the crock pot.  Rinse and pat dry turkey.  Put it in the crock pot.  Add butter.  Cook on low for 4-5 hours or on high for 8-10.&lt;br /&gt;&lt;br /&gt;Here's how to use the liquid in the crock pot to make very flavorful gravy:&lt;br /&gt;Take out about 1/4 cup of the broth.  Add enough water to measure up to 2 cups.  Put in a saucepan over medium high heat.  Gradually add 2-3 Tablespoons of flour.  Whisk constantly until it comes to a boil.  Take the pan off the heat for 1 minute.  Yum!  (&lt;span style="font-style: italic;"&gt;If you don't want to make it on your own, most turkey breasts will come with a gravy packet. This fabulous recipe is one that freezes well - it tastes just as yummy thawed and reheated.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Hearty Beef Chili&lt;/span&gt;&lt;br /&gt;(&lt;span style="font-style: italic;"&gt;10 Servings&lt;/span&gt;)&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Ingredients:&lt;/span&gt;&lt;br /&gt;1 28 oz can diced tomatoes, undrained; 1 10 oz can chopped tomatoes &amp;amp; green chili peppers, undrained; 2 cups vegetable or tomato juice; 1-2 T chili powder; 1 tsp ground cumin; 1 tsp dried oregano, crushed; 3 cloves garlic, minced; 1 1/2 lbs beef stew meat, cut into 1" cubes; 2 c chopped onion (2 large); 1 1/2 cups chopped celery (3 stalks); 1 cup chopped green sweet pepper (1 med); 2 15-oz can of any of the following:  black beans, kidney, garbanzo--rinsed &amp;amp; drained&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Toppers:&lt;/span&gt;&lt;br /&gt;Sour cream, tortilla chips, cheese, snipped fresh cilantro, jalepenos&lt;br /&gt;&lt;br /&gt;In a 6-quart crock pot, stir together both cans of undrained tomatoes, the juice, chili powder, cumin, oregano &amp;amp; garlic.  Stir in meat, onion, celery &amp;amp; sweet pepper.  Cover and cook on low for 8-10 hours or on high for 4-5 hours.&lt;br /&gt;*If using the low setting, pour in the beans after 8-10 hours.  Put on high heat for 15 minutes more.&lt;br /&gt;&lt;br /&gt;Tip:  When the chili is finished cooking, I like to shred the meat because it ensures that just about every bite will have some beef in it.&lt;br /&gt;&lt;br /&gt;I don't like celery in soups so I just leave it out. One of the recipes on my list is "Homemade Flour Tortilla Recipe" that I found &lt;a href="http://http//www.cooking-mexican-recipes.com/flour_tortilla_recipe.html"&gt;here&lt;/a&gt;.   I made them tonight and I am crazy excited about how easy &amp;amp; yummy they were!  It never really occurred to me that I could make these on my own until I came across a few recipes for them online and saw how easy they would be to make.  Tortillas are a staple in my house.   I cannot wait to make these again!!&lt;br /&gt;&lt;br /&gt;Here's the recipe:&lt;br /&gt;&lt;span style="color: rgb(102, 51, 51); font-style: italic;font-size:85%;" &gt;&lt;a href="http://www.cooking-mexican-recipes.com/flour_tortilla_recipe.html"&gt;&lt;span style="font-weight: bold;"&gt;Homemade Flour Tortilla Recipe&lt;/span&gt;&lt;/a&gt;&lt;br /&gt;* 2 cups of white flour&lt;br /&gt; * 1 1/2 tsp. baking powder&lt;br /&gt; * 1 tsp. salt&lt;br /&gt; * 2 tsp. vegetable oil&lt;br /&gt; * 3/4 cup warm water&lt;br /&gt;&lt;br /&gt;Combine the flour, baking powder and salt in a bowl. In another bowl combine the warm water and oil.&lt;br /&gt;&lt;br /&gt;Add the water/oil mixture to the flour mixture, one tablespoon at a time and mix the dough with a fork. Once the water is mixed in, add another tablespoon of water and repeat the process until all the water is mixed into the dough. The dough will be sticky.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Kneading The Dough&lt;/span&gt;&lt;br /&gt;Lightly flour a wooden cutting board and knead the dough.&lt;br /&gt;&lt;br /&gt;Kneading is done by pushing the dough with the heals and palms of both hands down onto the board. Fold the dough back onto itself, give a quarter turn and push again with the palms and heels of your hands. Just repeat the process of pressing, folding and turning for about 4 or 5 minutes. Add a dusting of flour when the dough gets sticky.&lt;br /&gt;&lt;br /&gt;If the dough sticks to the cutting board while kneading, scrape up the dough and dust the board with a little flour and continue kneading.  Eventually the stickiness will go away and you will have a nice smooth dough.&lt;br /&gt;&lt;br /&gt;Place the dough back into the bowl and cover it with a damp towel or damp paper towel. Let the dough rest for 20 minutes.&lt;br /&gt;&lt;br /&gt;Divide the dough into golf-ball-size balls by pinching off the dough with your thumb and fore finger. Form each ball into a nice ball shape.&lt;br /&gt;&lt;br /&gt;Place the balls on a flat dish making sure they don't touch each other and cover with the damp cloth.  Let the dough rest again for 10 minutes.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Rolling The Tortillas&lt;/span&gt;&lt;br /&gt;Preheat a skillet or cast iron pan on medium high heat. You really can't beat cast iron pans for even heat distribution and their ability to withstand high heat without warping.&lt;br /&gt;&lt;br /&gt;Lightly dust your wooden cutting board with flour. Take one of the balls of dough and flatten it out on the cutting board to a 4 inch circle. Rub flour on your rolling pin and begin to roll out the dough starting from the center out. Roll the tortilla until it is 6 or 7 inches in diameter and about 1/8 inch thick.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Cooking The Tortillas&lt;/span&gt;&lt;br /&gt;Once you have rolled out the tortilla, place it on a preheated skillet. You don't need to add any oil or butter. Cook the tortilla for about 30 seconds. You will notice brown spots all over your tortilla. Flip it over and cook an additional 30 seconds.&lt;br /&gt;&lt;br /&gt;Don't over cook it as you want the tortilla to be nice and soft.&lt;br /&gt;Keep your tortillas warm by covering them in a towel on a plate or in a tortilla warmer.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Storing Tortillas&lt;/span&gt;&lt;br /&gt;Tortillas are best eaten hot right off the griddle, but you can refrigerate and freeze them too.&lt;br /&gt;&lt;br /&gt;If you freeze the tortillas, wrap tightly in plastic wrap and put them in a ziplock bag. Yesterday while playing outside with the slip 'n slide, my 3 year old son (Gibson) said, "As long as I have my underwear, I can save the world!"  He was very proud and gave me a huge thumbs up. I get a real kick out of the funny things that kids say. &lt;/span&gt;&lt;span style="color: rgb(0, 0, 0);"&gt;&lt;br /&gt;&lt;br /&gt;As I was cleaning up lunch today I thought again about what Gibson said yesterday and I wondered...&lt;span style="font-style: italic;"&gt;is the Holy Spirit trying to remind me of something that I felt convicted of last week...through my 3 year old??&lt;/span&gt;&lt;/span&gt;&lt;span style="color: rgb(0, 0, 0);"&gt;&lt;br /&gt;&lt;br /&gt;I was reminded of a website that I came across last week called,&lt;/span&gt;&lt;a href="http://www.mothersfightingforothers.com/underwear-for-africa"&gt; &lt;span style="color: rgb(102, 0, 0);"&gt;Mothers Fighting For Others&lt;/span&gt;&lt;/a&gt; &lt;span style="color: rgb(0, 0, 0);"&gt;where men and women across the country are asked to donate underwear/money for school children, orphans and young adults in Africa who do not have any.  Since orphans only receive underwear if it is donated, it is considered a luxury to have brand new underwear. This article makes reference to another article called,&lt;/span&gt; &lt;a href="http://www.monstersandcritics.com/news/africa/features/article_1348549.php/Undignified_underwear_the_only_choice_for_Kenyas_poor"&gt;&lt;span style="color: rgb(102, 0, 0);"&gt;'Undignified' underwear the only choice for Kenya's poor&lt;/span&gt;&lt;/a&gt;&lt;span style="color: rgb(0, 0, 0);"&gt;.  This article explains how Kenyans are driven to buy used underwear out of necessity.  Yes,&lt;span style="font-style: italic;"&gt; used underwear&lt;/span&gt;.&lt;/span&gt;&lt;span style="color: rgb(0, 0, 0);"&gt;&lt;br /&gt;&lt;br /&gt;Doesn't it break your heart to think of little children not having underwear?  This is just one of the gazillion things that we take for granted.  I explained to the boys that some kids don't have underwear in other countries, but they don't get it.  My almost 7 year old (Graham) thinks it would be pretty great not to have to wear it. Today it was Gibson (age 3). I love using recipes that my 3 year old can help out with - Barbecue Chicken Legs in the crock pot. YuM!&lt;/span&gt;&lt;br /&gt;&lt;span style="color: rgb(51, 153, 153);"&gt;&lt;span style="font-weight: bold;"&gt;&lt;br /&gt;&lt;br /&gt;Barbecue Chicken Legs&lt;/span&gt;:&lt;/span&gt;&lt;br /&gt;&lt;span style="color: rgb(51, 153, 153);"&gt;Put 8 chicken legs in a crock pot and 1 bottle of sauce (I used Sweet Baby Rays) on top.  Put the cooker on low for 7-8 hours. That's it! (&lt;span style="font-size:85%;"&gt;I let Gibby pour the whole bottle of sauce on&lt;/span&gt;.)&lt;/span&gt;&lt;br /&gt;&lt;span style="color: rgb(51, 153, 153);"&gt;&lt;br /&gt;&lt;br /&gt;Yippie for an easy meal! It smelled deliciouso all day. I also had some corn on the cob that I soaked in the sink (in the husks) for a couple of hours. Then I threw them on the grill for about an hour and was supposed to flip them every 10 minutes or so. While the corn was cooking, I put some red potatoes tossed with fresh rosemary, a little bit of olive oil, and salt &amp;amp; pepper on a baking sheet in the oven. The potatoes were supposed to cook for about 30 min @ 375.&lt;/span&gt;&lt;br /&gt;&lt;span style="color: rgb(51, 153, 153);"&gt;&lt;br /&gt;&lt;br /&gt;So, here's where things flopped----&gt;My boys were DEMANDING.&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="color: rgb(51, 153, 153);"&gt;&lt;br /&gt;While I was trying to get the corn &amp;amp; potatoes together, my little darlings fought, complained, whined, needed potty help.....and on and on. Seriously, I wanted to scream {ok, I did scream}. Jason is usually the grill meister and takes great care to cook the corn. He said he flips it every 10 minutes or so. Unfortunatley, I have not mastered wearing my referee and chef hats at the same time and I forgot about the corn. {Aaaggh!} I was not able to flip the corn on the grill until about 20 min. into grill time and the cobs were burned on one side. Jason explained the corn as "chewey" and I had to agree. The boys did not notice and ate it right up.&lt;br /&gt;&lt;br /&gt;Now, the potatoes for whatever reason, took 4ever to cook. After about 45 minutes in the oven I decided to boil them and make smashed potatoes (I know, brilliant). But alas, we had NO MILK! So, while they were boiling I rushed to the grocery to get the daggon milk.&lt;/span&gt;&lt;br /&gt;&lt;span style="color: rgb(51, 153, 153);"&gt;&lt;br /&gt;&lt;br /&gt;They will be wonderful tomorrow. (I'm going to add a little sour cream and bake them-they'll be yummy.) Everyone was finished eating when I came home. In fact, Jason had sent both boys to their rooms for being so whiney and Gibson ended up falling asleep during his time out! Ha! Talk about tired! Brush a little butter on, add a cup of pizza sauce, piece of provolone or a sprinkle of mozzarella and some pepperoni on each piece. Make bread crumbs or 2. When discovering a new interest, it more than consumes me.  Many of my interests offer some kind of creative outlet (ie. crochet, scrapbooking, music).  However, a new interest that has captivated me lately is "couponing."  I have used coupons here &amp;amp; there, but have never used them to the extent that I have actually seen a substantial savings until recently.&lt;br /&gt;&lt;br /&gt;Over a month ago, I came across a few blogs that challenged readers to use coupons in a major way.  What caught my attention is the idea that I could actually save a substantial amount money on necessities and in return pay off debt, build up savings and have extra cash for some fun things for my family.&lt;br /&gt;&lt;br /&gt;It's been almost a month since I started using coupons and I can honestly say that we have saved a lot of money so far.  Hooray!  I am blown away by how many items we have been able to get for free or next to nothing!   If you would like to learn more about saving money with coupons, check out some of the blogs that I follow-they offer a great deal of advice and how to's!&lt;br /&gt;&lt;br /&gt;The most exciting part about using coupons to me is the idea that I could donate some of these free or practically-free items.  During my first week of couponing, I was able to get over $50 worth of toiletries for FREE!  I could not {still can't} believe it!  I will most definitely be donating all of those items to a women's shelter (and some to my extended family).  How COOL is that?!  I get crazy excited about that aspect of it.
